Buddha Bowl Inspiration

Last week I went to the Good Earth Holistic Kitchen in Hudson twice!  It was that good.  Both times I had their Buddha Bowl which has quinoa, kale, cauliflower, tofu, sweet potatoes and a delicious sauce, I think with tahini in it. 

Tonight I made my own bowl with quinoa, kale, peppers, tofu, sweet potatoes with some olive oil and real salt.  Next time I make this bowl, Iā€™m going to make a tahini dressing that includes water, lemon juice, olive oil, maple syrup, toasted sesame oil, garlic and sea salt.
