Delish Apple-Raspberry Crisp
In our cooking class with the Synergy Wellness Center at the Good Earth Holistic Kitchen, we cooked some delicious food, including this Apple-Raspberry Crisp from the Forks Over Knives website.
We adapted the recipe to use sunbutter instead of almond butter to make it nut-free. I made it the other day and Anna and Kate love it. They have been enjoying a little of it every day.
Last week, I encouraged everyone to do a Fruit + Veggie Challenge. If you saw that post and joined the challenge, I’d love to hear how it went for you. Did you have more energy, better digestion, better mood or experience any other benefits?
I have made it a habit to eat fruits and vegetables with every meal for a while now, so that part wasn’t challenging for me. What was challenging for me was the bonus part of the challenge, which was having only one sweet treat and less than 24 grams of sugar a day.
I enjoy a homemade matcha latte with unsweetened vanilla coconut milk and a tablespoon of maple syrup every day and sometimes I have a second one. There are 12 grams of sugar in 1 tablespoon of maple syrup, so if I have two matcha lattes that is all my added sugar for the day. I think maple syrup is one of the healthiest sweeteners, but it is still added sugar. I also enjoy some dark chocolate with almonds or almond butter and I love salted caramel and chocolate chip GoMacro MacroBars.
I learned that I could add less maple syrup to my matcha and it still tastes delicious to me, I can enjoy a mini macrobar instead of full size and I could have less chocolate and almonds and still feel satisfied.
I noticed that when I eat less added sugar, I have more steady energy throughout the day. Also, my skin is healthier, my mood is happier and more stable, and my digestion is better. What is less obvious but I believe to be helpful in the long term, is the strengthening of my immune system and staying in my healthy weight range.
If you’ve noticed that increasing the amount of fruits and vegetables and decreasing the amount of added and processed sugar and foods has been helpful to you, please let me know. I’d love to hear from you!
