Chocolate Chip Banana Bread

This chocolate chip banana bread recipe is gluten-free, egg-free and delicious too!  I definitely have a sweet tooth and love baked goods as a special treat.

Too much gluten affects my mood and digestive system and too many eggs make me tired and cause eczema flares.  Our family is sensitive to dairy, but we seem to be fine with butter since it is a high-fat dairy product that contains only trace amounts of lactose. 

This recipe makes two loaves of bread and both loaves are usually eaten within 24 hours. If you make it, let me know how you and your family like it!


Ingredients:

  • 1 ½ cups gluten-free flour (Bob’s Red Mill Gluten Free 1 to 1 Baking Flour)

  • 1 cup sugar

  • ½ cup melted butter

  • 2 teaspoons vanilla extract

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 5 mashed bananas (minimum 2 cups mashed bananas)

  • ½ cup mini chocolate chips

Directions:

  1. Grease two glass loaf pans.

  2. Mash bananas in a blender until smooth.

  3. Add melted butter, sugar and vanilla and mix.

  4. Add flour, baking soda, baking powder and mini chocolate chips and mix.

  5. Pour batter evenly into the two greased loaf pans.

  6. Sprinkle some extra mini chocolate chips along the top of each loaf.

  7. Bake at 375 degrees for 40 to 45 minutes or until done.
