Chocolate Chip Banana Bread
Ingredients:
1 ½ cups gluten-free flour (Bob’s Red Mill Gluten Free 1 to 1 Baking Flour)
1 cup sugar
½ cup melted butter
2 teaspoons vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
5 mashed bananas (minimum 2 cups mashed bananas)
½ cup mini chocolate chips
Directions:
Grease two glass loaf pans.
Mash bananas in a blender until smooth.
Add melted butter, sugar and vanilla and mix.
Add flour, baking soda, baking powder and mini chocolate chips and mix.
Pour batter evenly into the two greased loaf pans.
Sprinkle some extra mini chocolate chips along the top of each loaf.
Bake at 375 degrees for 40 to 45 minutes or until done.
