Healthy Homemade Banana Ice Cream

Ice cream season has begun here in New England, and if you have chosen to go dairy-free for your health and wellness, here is a delicious option for you and your family!

This simple recipe is so yummy with just the frozen bananas and a little bit of any type of non-dairy milk.  Adding the maple syrup is optional for extra sweetness.  

Sometimes I like to enjoy it just like this, simple, sweet, smooth, cool and refreshing!  Other times it is fun to add toppings such as mini chocolate chips or your favorite crushed nuts.

If you are allergic or have a sensitivity to nuts, you could consider other milks such as oat or rice milk and skip the nut butter!

Ingredients:

  • 2 frozen bananas

  • 1 tablespoon maple syrup

  • 1 tablespoon almond butter

  • ¼ to ½ cup coconut milk

Directions:

  1. Put all the ingredients in a blender and blend.

  2. Start off at a low speed and slowly increase as it softens.

  3. Use the blender tamper tool as necessary.

  4. Enjoy as is or add fun and healthy toppings!

Bonus: to make strawberry ice cream, just add a few frozen organic strawberries! If you try this or have already tried this and you love it, please let me know.
