Lulu Inspired Oatmeal Cookies

​​A couple of weeks ago, I baked these yummy gluten-free, dairy-free and egg-free oatmeal cookies. This recipe is inspired by one that my friends Lora and Lucas shared with me many years ago. 

This is an adapted version of Luke’s mom’s Lulu’s Healthy Cookie recipe.  These delicious cookies are light and sweet with healthy ingredients such as applesauce and oats.  

To stick with my Greens Challenge, I plan to try this similar oatmeal cookie recipe with spinach and then adapting it to make it egg-free. If it turns out well, I’ll be sure to share!

Ingredients:

  • 1 cup gluten-free rolled oats

  • ¾ cup gluten-free oats

  • 1 ½ cups gluten-free flour (King Arthur)

  • ½ cup brown sugar

  • ½ cup avocado oil

  • 1 cup applesauce

  • 1 cup mini chocolate chips

 Directions:

  1. Blend ingredients together in a bowl.

  2. Flatten heaping teaspoons of dough onto parchment paper on a cookie sheet.

  3. Bake for 10 to 12 minutes at 375 F.
