Vegan Nourish Bowl

We’ve been enjoying making and creating a lot of rice bowls in our home lately.  We start with brown rice, white rice or even cauliflower rice every once in a while.  Then we add our vegetables, healthy proteins, fats, sauces and spices.  It is a simple and fun way to provide a quick, easy and nourishing meal for you and your family.

Ingredients:

  • 2 cups of brown rice

  • 1 or 2 heads broccoli

  • 1 or 2 large grated carrots

  • 1 can garbanzo beans (chickpeas)

  • 1 avocado

  • hemp hearts

  • olive oil 

  • coconut aminos

  • Redmans Real Salt 

Directions:

  1. Cook the brown rice as instructed on the package.

  2. Chop broccoli into bite sized pieces and bake or steam.

  3. Peel and grate carrots.

  4. Open and drain a can of garbanzo beans (chickpeas).

  5. Cut avocado into bite sized chunks.

  6. Scoop rice into a bowl and then put some broccoli, chickpeas and grated carrots on top.

  7. Pour on some olive oil and coconut aminos to taste.

  8. Add some avocado chunks on top.

  9. Sprinkle on hemp hearts and some salt.
