Teen School Lunches
I was recently asked for tips on packing school lunches. Our girls started packing their own lunches for school a while ago. However, if they are really busy with homework and after school activities, sometimes I will make their lunches for them.
Tapping Away Anxiety
One way that anxiety is triggered in me is when Emmy, our sweet golden retriever, has adverse symptoms from her autoimmune disease. She will be 11 years old in less than a month.
Green Apple + Kale Salad
Today for lunch I had this delicious salad with chopped kale, diced green apple chunks, shredded rainbow carrots and toasted pumpkin seeds. The dressing is olive oil, lemon juice, Italian seasonings and some real salt sprinkled on top.
Pumpkin Cookies + Maple Frosting
This delicious gluten-free pumpkin cookie recipe is from the Ambitious Kitchen website. Thank you to my friend Anne who shared the recipe with me! These cookies are light, fluffy, moist, and a special fall treat.
Changing Our Subconscious Beliefs
I realized recently that I still get really anxious when I travel and visit cities. On our last family trip, when we were walking around Seattle, we crossed many roads with busy traffic and busses zooming around the corners.
Vanilla + Blueberry Oats
Are you a fan of overnight oats or mush? I recently made these vanilla blueberry overnight oats and they turned out great! I added the maple syrup the next morning, after I did a little taste test and I thought it was just right.
Pumpkin + Cinnamon Smoothie
It is pumpkin and apple season here in New England! It is time to have fun making healthy and delicious treats that include these famous fall ingredients. This pumpkin smoothie was so thick and creamy that I actually enjoyed it with a spoon like a pumpkin pudding or soft serve ice cream.
Balancing Life + Hormones
I just finished reading this wonderful book called Healing Fibroids: A Doctor’s Guide to a Natural Cure by Allan Warshowsky, M.D. and Elena Oumano, Ph.D. This book is filled with wisdom, knowledge, resources and guidance for not only those hoping to naturally heal their fibroids, but for anyone on their healing journey.
Dreams + Deadlines
A year ago I decided to pursue my dream of starting my own health coaching business. I had a strategic plan and specific goals concerning how many clients I hoped to have and how much income I would make in order to call it a success.
Healthy Red, White + Blue Treat
Happy 4th of July! Here’s a delicious, gluten-free, vegan, healthy, red, white and blue snack or dessert to enjoy on this special day. Cherries and berries are some of my favorite fruits and I love this dairy-free and sugar-free yogurt. Enjoy!
Summer Time Pasta Salad
Here is a delicious pasta salad recipe that my friend Julia Hayes @juliahayeswellness shared on Instagram. I modified it slightly, skipping the diced red onion and black olives and adding the shredded carrots to our recipe. This pasta salad is gluten-free, dairy-free and egg-free!
Joy + Passion
“I have since learned that the healthiest thing I could do was focus on what brings me joy, to follow my passion, and make my choices from a place of love, not fear.” - Anita Moorjani from her book What If This Is Heaven?
Fragile + Resilient
These beautiful wild pansies bloom every year in our flower bed. They are so delicate and so strong at the same time. Sometimes I feel like our bodies and our minds are like that. Even though we may be fragile, we are also resilient, and this gives me hope.
Easy Baked Cod + Veggies
I was a really picky eater when I was a kid. All I really wanted to eat was chicken, corn and spaghetti with butter and salt. Fish is still one of those things that I will only eat if I can’t taste the fishy flavor. Adding the italian herbs, olive oil, salt and a squeeze of lemon made this cod taste light and delicious!
Healthy Homemade Banana Ice Cream
Ice cream season has begun here in New England, and if you have chosen to go dairy-free for your health and wellness, here is a delicious option for you and your family!
Raw Nuts + Chocolate Chunks
If you are trying to avoid gluten, dairy, eggs and processed food, but you’d like a simple, sweet and crunchy treat, here’s an idea for you! Mix one to two tablespoons of chocolate chunks with a small handful of raw almonds and walnuts in a bowl and enjoy.
Overnight Oats
Here is a yummy overnight oats recipe that Anna and Kate both love. The girls usually have a smoothie for breakfast and we just recently tried out this oats recipe. This can be a delicious gluten-free and dairy-free mid-afternoon snack too.
You Can Heal Too
Three weeks ago, Anna and I tested positive for Covid. Then a week later, Kate got it too. After ten days of isolation and quarantine in my room, I felt a depression that I hadn’t felt in years.
Paying Attention To Emotions
I’ve been doing a lot of reflection on how I process and what I do with emotions, such as fear. I’m paying attention to how waves of fear affect me physically and what happens when I try to ignore them.
A Rainbow In Someone's Cloud
I took this picture of this cool mural last week when we were on our sunny, warm and fun family vacation. Two days after we got home, our sweet old Golden Retriever was limping and then wouldn’t stand up because of the pain in her swollen hind legs. The next day, Anna and I both tested positive for Covid.
